Cucumber & Dill Soup

  • 3 large cucumbers, peeled
  • 2 cups plain yogurt
  • 1 cup sour cream
  • 1 cup buttermilk (optional, may increase yogurt and sour cream ½ cup each)
  • ¼ cup red onions
  • plenty of dill, preferably fresh
  • salt/pepper
  • some finely diced red pepper, couple sprigs of dill
  • dash of hot sauce

In food processor mix cucumber and onions until pulpy. Add the dairy and and blend until creamy. Add dill, salt and pepper to taste, dash of hot sauce and pulse until well blended. Chill at least one hour.

Garnish with sprig of dill and red pepper. Serve with toasts or melba.
