Filet Mignon Crostini with Caramelized Red Onions & Blue Cheese

  • 8 oz. Fillet mignon
  • 10 crostinis or baguette toasts
  • 1 red onion, ¼ inch sliced rings
  • buttermilk
  • crumbled blue cheese
  • butter
  • pepper

Sautee onions in butter until nicely caramelized. Set aside. Sear or grill fillet rare. Thinly slice fillet and drape pieces onto toast, and neatly pile caramelized onions on top. Center about ½ teaspoon blue cheese on top and finish under broiler for about 2 minutes. Crack pepper and serve.
