Spaghetti and Turkey Meatballs

  • 1 pound ground turkey
  • 1/4 cup diced onion
  • 1/2 cup homemade quality bread crumbs
  • 1/8 cup diced red pepper
  • 1/8 cup finely chopped carrot
  • 1/8 cup finely chopped FRESH parley
  • any herbs you have, finely chopped
  • 2 or 3 eggs, beaten
  • garlic powder
  • chili powder
  • salt pepper
  • spaghetti noodles, cooked and drained

Mix all ingredients thoroughly with your hands, season as desired. Roll into golf ball sized balls. Sautee in a bit of oil at medium heat until all sides browned. Move to 350 degree oven for about 20-25 minutes.

Heat some onions and garlic in olive oil, add 2 cups roasted or stewed tomato chunks, a big splash of white or red wine, 2-3 tablespoons of white sugar and cook off until sauce is reduced and fragrant. In the last minutes of cooking, add a handful of fresh basil. Serve over al dente spaghetti with meatballs and Parmesan.
